- 250 glow-fat quark
- 3large eggs, separated
- 200 gegg whites
- 80 gplain flour
- 100 mlsemi-skimmed milk
- 1 tspvanilla extract
- 1 tspUnsalted Butter
- 200 gmixed berries
Make it
Method
Separate the eggs. Whisk the quark, egg yolks, milk and vanilla until smooth, then sift in the flour and stir only until no dry pockets remain.
In a clean bowl, whip the egg whites to soft peaks. Fold them through the quark batter in two additions so the mixture stays light.
Cook the batter in a lightly buttered non-stick pan over medium-low heat until the base is golden and the top is mostly set. Turn in large pieces, tear into bite-size pieces and cook until lightly golden throughout.
Divide between servings and add the listed fruit or topping just before serving.
