  • 200 mlhigh-protein semi-skimmed milk

  • 150 gplain skyr
  • 80 gbanana, sliced
  • 10 gunsalted almonds, roughly chopped

  • 1 pinchfine salt

Method

  1. Weigh and prepare all ingredients for High-protein banana almond porridge: 45 g rolled oats, 200 ml high-protein semi-skimmed milk, 100 ml water, 150 g plain skyr, 80 g banana, sliced, 10 g unsalted almonds, roughly chopped, 1/4 tsp ground cinnamon, 1 pinch fine salt. Wash produce and cut or grate it as the recipe requires.

  2. Put the oats, milk, water, and salt in the cold saucepan. Set over medium heat and stir frequently for three to four minutes, until the mixture reaches a gentle simmer.

  3. Lower the heat. Simmer for another two to three minutes, stirring continuously around the base and corners, until the oats are tender and the spatula leaves a trail that closes slowly.

  4. Remove the pan from the heat. Stir one spoonful of hot porridge into the skyr first, then fold the tempered skyr through the pan; this keeps it creamy instead of splitting.

  5. Transfer to a bowl immediately. Arrange the banana on top and finish with the almonds and cinnamon. If the porridge thickens before serving, loosen it with one tablespoon of water.
