Method
Weigh and prepare all ingredients for Mee goreng mamak: 50 g Peanuts, 15 g Chilli, 10 g Prawns, 75 ml Oil, 750 ml Water, 7.5 ml Lemon Juice, 250 g Potatoes, 2 pcs (approx. 240 g) Red Onions, 4 pcs (approx. 20 g) Garlic Clove, 30 g Cabbage, 30 g Chinese Broccoli, 1 pcs (approx. 100 g) Tofu. Wash produce and cut or grate it as the recipe requires. Drain and rinse any canned pulses under cold water. Keep raw animal products separate from ready-to-eat ingredients, and wash used bowls and knives promptly.
Heat a wide pan over medium-high heat. Add the listed oil if included and cook Peanuts in a single layer until it takes on colour.
Add the remaining ingredients in their appropriate cooking order and toss for about 15 minutes. The ingredients should be tender but not falling apart.
Cook fish or prawns until opaque; aim for 63°C at the thickest point.
Divide Mee goreng mamak into 4 equal portions. Add fresh herbs, cheese or delicate greens only at the end and serve straight away.
