Ingredients
Measured for 3 servings.
- 2 pcs (approx. 240 g)Onion
- 14 gButter
- 454 gRaw ground beef, 95% lean / 5% fat
- 2.5 gSalt

Make it
Method
Finely grate about one quarter of the 240 g onions for the patties; thinly slice the rest. Cook the sliced onions in 14 g butter over medium-low heat for about 20 minutes, stirring, until deeply golden and sweet but not burnt. Transfer to a plate.
Mix 454 g raw 5%-fat ground beef with the grated onion, measured salt, black pepper, nutmeg, 4 g cornstarch and 50 ml water only until combined. Form six equal, fairly flat patties; do not knead them into a dense paste.
Melt the remaining 28 g butter in the pan and fry the patties in batches, browning both sides and then lowering the heat until the centre reaches 71°C. Warm the onions in the pan and divide over the six patties. Serve two patties per person; bread, potatoes and any extra gravy are not included in the stated nutrition.
