Ingredients

- 500 glean stewing beef, cut into small cubes
- 600 gcooked chickpeas, drained
- 1large onion, finely diced
- 2garlic cloves, crushed
- 1 tbsptomato paste
- 1 tbspred pepper paste
- 1 tbspextra-virgin olive oil
- 700 mllow-salt beef stock
Make it
Method
Heat the oil in a heavy pot over high heat. Brown the beef in small batches so it sears rather than steams, then transfer it to a clean plate.
Reduce the heat to medium. Cook the onion in the remaining oil until soft, then stir in the tomato paste and spices for 1 minute.
Return the beef, add the listed stock and simmer gently, partly covered, until the beef is tender. Stir in the drained chickpeas only near the end so they keep their shape.
Check seasoning, rest for 3 minutes and serve.
