What you need

- 500 gGround Pork
- 120 gOnion
- 10 gGarlic
- 70 gBread
- 30 mlMilk
- 1 pcs (approx. 55 g)Egg
- 5 gSalt
- 1 gBlack Pepper
- 1 gDried marjoram
- 5 gMustard
- 4 gParsley
- 20 gWheat flour for coating
Make it
Method
Moisten 70 g bread evenly with the measured 30 ml milk and break it into crumbs; no surplus soaking milk is assumed. Finely chop 120 g onion, 10 g garlic and 4 g parsley, then mix them with 500 g ground pork, the bread, one 55 g egg, 5 g mustard, 1 g dried marjoram, 5 g salt and 1 g black pepper just until combined.
Shape six equal, moderately flat patties. Spread the measured 20 g flour on a plate and press both faces of each patty into it, using the full measured amount; this is a thin flour-only coating, not the source recipe's separate egg-and-breadcrumb breading. Heat a good nonstick pan over medium heat; the pork should release enough fat, so no extra oil is included.
Cook the patties in batches for about 5–7 minutes on each side, lowering the heat if the flour browns too fast. Check the thickest centre reaches 71°C. If a batch needs more time, add a spoonful of water and cover briefly, then uncover to dry the surface. Divide two patties per person; potatoes, bread and sauce are not included in the nutrition.
