Make it
Method
Finely grate 120 g onion and 20 g garlic, and chop 12 g parsley. Crumble the measured 10 g vegetable stock cube into 45 ml water so it dissolves; keep this liquid with the meat mixture.
Combine 500 g ground beef and 250 g ground pork with the onion, garlic, parsley, 6 g paprika, 3.8 g baking powder, 14 g breadcrumbs, stock liquid, 5 g salt and 2 g pepper. Mix only until evenly combined, then form short, thumb-thick rolls with clean hands.
Heat a dry nonstick grill pan over medium-high heat. Grill the rolls in batches for roughly 12–14 minutes per batch, turning several times, until browned all around and the centre of each roll reaches at least 71°C; do not crowd the pan.
Divide the cooked rolls evenly between three servings. If the shaped rolls are prepared ahead, refrigerate them covered and cook within a safe storage period; never leave raw minced meat at room temperature.
