Method
Warm 80 g milk gently with 50 g of the measured butter and 15 g molasses until the butter melts; cool until just lukewarm. Stir in 220 g water and one of the nine measured eggs. Mix with 500 g bread flour, 10 g salt and 10 g yeast to form a soft dough; cover and leave about 45–60 minutes until noticeably risen.
Divide the dough into eight buns and let rise again for about 20 minutes. Heat the oven to 220°C, brush with the measured 20 g egg wash, scatter over 20 g sesame seeds and bake for about 15–20 minutes until golden. Cool enough to slice.
Slice the measured four onions and soften them in a nonstick pan with the reserved 10 g butter. Sear the eight sirloin steaks in a hot pan in batches until each reaches at least 63°C; rest 3 minutes. Cook the remaining eight eggs until yolks and whites are firm.
Split the buns and fill each with one steak, one egg and an equal share of the cooked onions. Serve eight sandwiches promptly. No unlisted tomato, cheese, bacon or sauces are included in the calculated nutrition.
