Method
Weigh and prepare all ingredients for Arepa pelua: 500 g Beef, 1 pcs (approx. 120 g) Onion, 1 pcs (approx. 119 g) Red Pepper, 10 g Garlic, 2 g Cumin, 5 g Oregano, 2 g Paprika, 1000 ml Beef Stock, 600 ml Water, 1 g Salt, 200 g Cheese, 1 g Extra Virgin Olive Oil. Wash produce and cut or grate it as the recipe requires. Keep raw animal products separate from ready-to-eat ingredients, and wash used bowls and knives promptly.
Heat the oven to 200°C. Lightly oil an ovenproof dish and arrange Beef with the remaining ingredients in an even layer.
Bake on the middle rack for about 40 minutes. The centre should be hot and the top lightly coloured; rest filled dishes for 5 minutes before cutting.
Divide Arepa pelua into 8 equal portions. Add fresh herbs, cheese or delicate greens only at the end and serve straight away.
