Method

  1. Weigh and prepare all ingredients for Kenyan Beef Curry: 960 ml Water, 908 g Sirloin Steak tips, 4 pcs (approx. 20 g) Garlic Clove, 10 g Ground Ginger, 30 ml Oil, 240 g Red Onions, 4 pcs (approx. 480 g) Tomato, 12 g Paprika, 1 g Black Pepper, 10 g Curry Powder, 60 g Tomato Puree, 1 g Salt. Wash produce and cut or grate it as the recipe requires.

  2. Cook the listed aromatics and firm vegetables, if present, in oil over medium heat for 3–4 minutes until softened.

  3. Add Water and the listed liquids, bring to a gentle simmer, and cook partly covered for about 40 minutes. Add delicate greens only in the final 2–3 minutes.

  4. For minced meat, confirm that the centre reaches at least 71°C; no raw or pink area should remain.

  5. Divide Kenyan Beef Curry into 4 equal portions. Add fresh herbs, cheese or delicate greens only at the end and serve straight away.
