- 454 gSliced Beef Steak
- 75 mlSoy Sauce

- 15 gGarlic
- 360 gOnion
- 60 mlOlive Oil
- 240 mlWater

Make it
Method
Slice the 454 g raw beef steak thinly against the grain. Squeeze the juice from the measured lemon and mix it with 75 ml soy sauce and 15 g minced garlic. Coat the beef, cover and marinate in the refrigerator for at least 60 minutes. Cut 360 g onion into rings. Lift the beef from the marinade and keep all marinade liquid for cooking; do not use it raw as a finishing sauce.
Heat part of the measured 60 ml olive oil in a wide pan over medium heat. Cook half the onion rings for about 2–3 minutes until softened and set aside. Add the beef in batches, using more of the measured oil as needed, and sear about 1 minute per side; remove it from the pan. Soften the remaining onions in the same pan without burning them; the minced garlic remains in the reserved marinade.
Pour in the reserved marinade and 240 ml water and bring to a full boil, scraping up the browned bits. Return the beef; cover and simmer gently for about 10–15 minutes for thin, tender steak, checking that the centre is cooked and the meat is tender. A tougher cut may need more time and a splash of water; do not let the sauce dry out. Top with the reserved soft onion rings, taste the soy-rich sauce before adding any of the measured 1 g salt, and divide into four portions.
