- 600 gskinless chicken thigh, diced
- 720 gcooked white beans, drained
- 1onion, finely diced
- 2garlic cloves, crushed
- 1 tbsptomato paste
- 1 tbspred pepper paste
- 1 tbspextra-virgin olive oil
- 500 mllow-salt chicken stock
Make it
Method
Heat the oil in a heavy pot over medium-high heat. Brown the chicken in a single layer, working in batches if needed, then transfer it to a clean plate.
Lower the heat to medium and cook the onion in the remaining oil for 3–4 minutes until soft. Add garlic, tomato paste and pepper paste; stir for 1 minute until fragrant.
Return the chicken to the pot with the drained white beans and stock. Bring to a gentle simmer, cover loosely and cook until the chicken reaches 74°C and the sauce coats the beans.
Taste, adjust seasoning, rest for 3 minutes and serve hot.
