Make it
Method
Slice 320 g raw boneless turkey breast into thin, even pieces. Dice 120 g tomato and 120 g peeled avocado, tossing the avocado with the measured 10 ml lemon juice. Use separate utensils and a clean surface for these ready-to-eat toppings, away from the raw turkey.
Heat a good nonstick pan over medium heat and cook the turkey in a single layer, in batches if necessary, for about 8–12 minutes total depending on thickness. Check the thickest piece reaches 74°C; no added frying oil is included. Toast the measured 200 g whole-grain bread at the same time until crisp, usually 3–5 minutes.
Divide the cooked turkey and the avocado-tomato mixture over four equal bread portions; each contains about 80 g raw-weight turkey and 50 g bread. Serve immediately. If meal-prepping, cool the cooked turkey promptly and refrigerate it separately from bread and avocado, then assemble shortly before eating.
