Method
Weigh and prepare all ingredients for Boxty Breakfast: 720 g Potatoes, 30 g Spring Onions, 100 g Plain Flour, 1 pcs (approx. 33 g) Egg White, 150 ml Milk, 5 g Bicarbonate Of Soda, 42 g Butter, 30 ml Vegetable Oil, 6 pcs (approx. 102 g) Cherry Tomatoes, 12 pcs (approx. 336 g) Bacon, 6 pcs (approx. 330 g) Egg. Wash produce and cut or grate it as the recipe requires. Keep raw animal products separate from ready-to-eat ingredients, and wash used bowls and knives promptly.
Heat the oven to 200°C. Lightly oil an ovenproof dish and arrange Potatoes with the remaining ingredients in an even layer.
Bake on the middle rack for about 40 minutes. The centre should be hot and the top lightly coloured; rest filled dishes for 5 minutes before cutting.
