- 280 gsalmon fillets
- 120 gquinoa, rinsed
- 200 gbroccoli florets
- 1red pepper, sliced
- 1 tbspreduced-salt tamari
- 2 tspfresh ginger, grated
- 1 tspsesame oil
- 240 mlWater
Make it
Method
Rinse the quinoa in a fine sieve. Put it in a small saucepan with 240 ml water, bring to a boil, cover and cook on low heat for 12–15 minutes. Remove from the heat and leave covered for 5 minutes before fluffing.
Before handling the salmon, mix tamari, ginger and sesame oil in a clean bowl, then divide it between two clean bowls. Use one half only to coat the raw salmon and reserve the untouched half for serving.
Heat the oven to 210°C. Arrange the salmon, broccoli and pepper on a lined tray; roast for 12–15 minutes, until the salmon is opaque and 63°C at its thickest point.
Divide quinoa and vegetables between 2 bowls, add the salmon and drizzle with the reserved clean dressing.
