  • 280 gsalmon fillets
  • 120 gquinoa, rinsed
  • 200 gbroccoli florets
  • 1red pepper, sliced
  • 1 tbspreduced-salt tamari
  • 2 tspfresh ginger, grated
  • 1 tspsesame oil
  • 240 mlWater

Make it

Method

  1. Rinse the quinoa in a fine sieve. Put it in a small saucepan with 240 ml water, bring to a boil, cover and cook on low heat for 12–15 minutes. Remove from the heat and leave covered for 5 minutes before fluffing.

  2. Before handling the salmon, mix tamari, ginger and sesame oil in a clean bowl, then divide it between two clean bowls. Use one half only to coat the raw salmon and reserve the untouched half for serving.

  3. Heat the oven to 210°C. Arrange the salmon, broccoli and pepper on a lined tray; roast for 12–15 minutes, until the salmon is opaque and 63°C at its thickest point.

  4. Divide quinoa and vegetables between 2 bowls, add the salmon and drizzle with the reserved clean dressing.
