What you need
Ingredients
Measured for 4 servings.
- 500 gskinless chicken breast, thinly sliced
- 600 gcold cooked long-grain rice
- 4large eggs, beaten
- 200 gfrozen peas
- 150 gsweetcorn, drained
- 1red pepper, diced
- 4spring onions, sliced
- 20 gfresh ginger, grated
- 2 tbspreduced-salt soy sauce
- 1 tbspsesame oil
Make it
Method
Heat a wok or wide pan until hot. Cook the chicken in a single layer first, turning as needed, until it reaches 74°C; transfer it to a clean plate.
Add the egg to the pan and scramble just until set. Add the vegetables and stir-fry until crisp-tender, then add the cold cooked rice and break up any clumps.
Return the chicken and egg to the pan. Add soy sauce and sesame oil at the end, toss until steaming hot and serve immediately.
