Method
Weigh and prepare all ingredients for Irish Stew: 300 g whole wheat, 2000 g lamb loin chops, 120 ml olive oil, 840 g shallots, 320 g Carrots, 2 pcs (approx. 200 g) turnips, 1 pcs (approx. 100 g) celeriac, 350 g charlotte potatoes, 150 ml white wine, 4 g caster sugar, 4 g fresh thyme, 4 g oregano. Wash produce and cut or grate it as the recipe requires. Keep raw animal products separate from ready-to-eat ingredients, and wash used bowls and knives promptly.
Cook the listed aromatics and firm vegetables, if present, in oil over medium heat for 3–4 minutes until softened.
Add whole wheat and the listed liquids, bring to a gentle simmer, and cook partly covered for about 40 minutes. Add delicate greens only in the final 2–3 minutes.
Divide Irish Stew into 12 equal portions. Add fresh herbs, cheese or delicate greens only at the end and serve straight away.
